White color, little compact texture of soft flavor and under in salt. To consume with a minimum of one or two days of ripeness. Burgos Type.

   

 Creamy

 

 

 

Whitish yellow color, soft and greasy texture of soft flavor. To consume  with a minimum of 15 days of ripeness.

 Cured

 

 

 

Yellow color, firm texture of strong and intense flavor. To consume with a minimum of two months of ripeness.

   

 Sheep

 

 

 

Intense yellow color, very compact texture of strong and very intense flavor. To consume with a minimum of four months of ripennes.

In the times of ripen of our cheeses we pamper them and turn daily in a craft way achieving like this a uniform cure, so much in his crust as in his paste.
